Roasted Turnips, Sweet Potatoes, Apples and Dried Cranberries

Ingredients
3 cups cubed, peeled turnips3 cups cubed peeled sweet potato2 1/2 cups cubed peeled Granny Smith apple1 cup dried cranberries1/2 cup packed dark brown sugar1 tablespoon fresh lemon juice2 tablespoons butter (or vegan butter sub), cut into small pieces
Directions
Preheat oven to 350. Combine first 6 ingredients in a shallow 2 quart baking dish coated with oil or cooking spray. Top with butter. Bake for 1 1/2 hours or until tender, sturring after 45 minutes.

    This is fantastic! I didn't have any sweet potatoes so substituted carrots. Also, substituted brown sugar splenda blend and low fat margarine. I'm going to be making this for my boys. They will never realize they are eating turnips. - 2/14/14

    Trying to have turnips instead of potatoes to reduce my carb load--this recipe is more carb heavy than just eating the potatoes. Yikes! - 5/19/17
