almond meal - 2 cups3 eggsunsweetened applesauce - 1 cup (or blend up 1-2 baked apples)honey - 1/4 cup2 TBSP ground cinnamon2 TBSP ground ginger1 tsp ground cloves1 TBSP ground nutmeg1 tsp baking powder (or equivalent, as I just learned that baking powder isn't SCD legal, still looking for my own replacement, would love suggestions, cream of tartar is not legal either)1 tsp baking soda2 TBSP vanilla extract1/4 tsp saltPreheat oven to 350 degrees.In large bowl, blend eggs well to get lots of air into them - should be bubbly. Then blend in vanilla, applesauce, and honey.In smaller bowl, whisk all dry ingredients together (a chopstick works great), then slowly blend into wet mixture.Spoon evenly into 12 paper-lined muffin cups (an ice cream scooper works great).Bake 20-25 minutes, test with toothpick for doneness.Enjoy!This recipe also works great in a loaf pan, or as mini-muffins, just watch more closely for doneness of the minis :)
