Lentil Tacos

Ingredients
1.5 C brown lentils, rinsed3 C. water1/2 C. diced onion3 garlic cloves, minced1 T. olive oil1/2 can diced tomatoes, canned(spices: turmeric, paprika, cayenne, salt, pepper)
Directions
Saute onion and garlic in olive oil. Add lentils and water, cook until lentils are soft. Add tomatoes and spices and cook until the liquid has been absorbed.

Serve on corn tortillas with cheese and sour cream, if desired.

Serving Size: Filling serving size: 1/4 C. of mix per taco (12 servings per batch)
