Ingredients
1 Tbs Olive Oil4 Cloves Garlic, Peeled & Minced1 Medium Onion, Peeled & Coarsely Chopped4 Large Carrots, Pelled & Sliced Into Coins2 Cups Green Bell Pepper, Chopped6 Large Celery Stalks, Chopped1/2 Medium Head Cabbage1 Can Petite Diced Tomatoes w/Garlic & Olive Oil (I use Safeway Brand)1 Envelope Lipton Dry Beefy Onion Soup Mix1 XL Knorr Beef Bouillon Cube1/2 Bottle V-8 Juice (Use "Spicy" for more of a kick)2 Cups Swanson Beef Bouillon
Directions
Sautee Onion, Celery, Carrot, and Green Bell Pepper in Olive Oil until slightly soft. Add garlic, cook one more minute. Add all other ingredients. Simmer on low for at least 2 hours. Season to taste - I like Sea Salt, Cracked Black Pepper, and dried Basil flakes.
