Soycutash Salad with Creamy Avocado Dressing

2 1/2 cups of Trader Joe's Soycutash (thawed) or a frozen bag of soy beans, corn and red bell pepper1 large tomato, seeded, dicedFor dressing:1/4 (35 grams) cup avocado1 tsp. lime juice2 tbsp. greek yogurt1/2 tsp. Chipotle in Adobo Sauce (more to taste)1/8 tsp. garlic powder1/4 tsp salt1/4 tsp. pepper1 tsp. milk to thin out
In a bowl, add the Soycutash and tomatoes; set a side.
To make dressing: In a blender, add avocado, lime juice, greek yogurt, chipotle in adobo sauce and garlic powder. Process until smooth. To thin out the dressing, add milk about a teaspoon at a time. Add salt and pepper to taste. Pour dressing over vegetables, and refrigerate until ready to serve.
