Easy Pot Pie

Ingredients
1 lb. venison1 tbsp. olive oil1 medium onion chopped1 stalk celery chopped1 cup chopped carrots1 cup frozen peas2 cups frozen spinach1 cups frozen hash browns2 cups Bisquick1 cup milk2 large eggs1 can reduced fat cream of mushroom soup3 tbsp. reduced fat sour cream
Directions
Sautée onion and celery together in olive oil then add the hash browns. Cook until soft. Add venison or beef and cook until browned. While that is cooking cut carrots and place in microwave safe bowl with spinach and peas. Microwave for 6-7 minutes or until carrots are tender. Add veggie mixture to meat mixture adding 3 tbsp. milk, cream of mushroom, and sour cream. In a greased 9 x 12 glass dish add mixture. Mix Bisquick, eggs and rest of milk. Pour over top of mixture. Bake at 375 degrees for 25-30 minutes.
