Ingredients
1 egg whites 16oz carton1 1lb chorizo ground or link1 package 20 corn tortillas1/4 cup canola oil
Directions
1 medium saucepan use a small amount (1/4) cup canola oil on medium high heat. Cut 4 tortillas into small square pieces. Add to pan until crispy then remove. In a separate large saucepan on medium heat add 1lb chorizo. Don't add oil, chorizo releases it's own. It will crumble as it cooks. Cook for 7 minutes remove grease from pan and add chorizo back in. Add egg whites to chorizo for one minute or until egg is cooked. Once done add crispy tortilla squares chorizo and egg mix, stir and serve. There are enough extra tortillas left over for one per person to make a taco with! Enjoy
