White Bean and Spinach Soup

1 quart low-sodium vegetable stock1 (15 ounce) can white beans, drained and rinsed1 medium onion, diced2 stalks celery, diced2 carrots, diced6 cloves garlic, thinly sliced1 fresh jalapeno1 tablespoon chopped fresh rosemary1 bay leaf2 whole cloves6 cups of spinach, washed and chopped1/2 cup fresh parsley, chopped finelylemon juice and zest from one lemon
Add all ingredients except for lemon juice and spinach to large pot. Bring to a boil, turn down and simmer for 20 minutes. Add spinach and cook for 10 minutes more. Stir in lemon juice and fresh parsley right before serving.
