Easy Oriental Rice and Chicken

Ingredients
1 lb chicken breast, no skin, ready-to-cook1 cup chopped onions1 cup chopped bok choy0.5 cup snow peas, fresh0.5 cup water chestnuts0.5 cup bean sprouts2 cups cooked Brown Rice, long grain1 tbs canola oil0.5 cup soy sauce
Directions
Cut chicken into bite size peices. Brown in canola oil. Add onions, bok choy, snow peas, water chestnuts, bean sprouts, and soy sauce. Toss until rice and vegetables are warmed through. Do not over cook vegetables.
Serves 4 but can be frozen and rewarmed for meals at work during the week.
* I always make my rice on Sunday and use it as I need it all week it makes cooking easier when you want something quick to eat.
