Broccoli-Cheese Soup (Lower Fat)

1 lb fresh or frozen broccoli florets1 14 oz can vegetable broth2 tablespoons all-purpose flour1 finely chopped yellow onion2 cloves finely chopped garlic1 tablespoon margarine 1/2 cup shredded cheddar cheese 1/2 cup part skim mozzarella1 cup half-and-half
Dump it all (minus the cheese and half-and-half) in the crock pot, mix it up and cook on low for 4 hours. Add in the dairy items in the last 20 minutes.
You can also cook in on the stove by bringing it all (minus half-and-half and cheese) to a boil, adding in the dairy and simmering it for 20 - 30 mins, or until the broccoli and onions are cooked through. For quicker simmer time, saute the onions and broccoli in the margarine before adding in anything else.
