2 Tbls olive oil2 tsp diced garlic1 small onion diced1 Large Can of Canned Italian Tomatoes - diced1/2 tsp each of ground oregano and basil2 small cans of low sodium chicken broth1 can of white beans, rinsed and drained8 Trader Joes Turkey meatballs (or sub any frozen meatball)Fresh grated Parmesan cheese for topping
Saute onions and garlic in olive oil. Add canned tomato, spices, chicken broth and meatballs. Bring to boil and simmer for about 20 minutes. Then add beans and simmer 10 more minutes. Top with fresh grated Parmesan cheese prior to serving.
This makes 4 servings with 2 meatballs each.
Look for low sodium tomato to bring the sodium count down.
