Chocolate Zucchini Cookies

1 Cup Brown Sugar1/2 Cup Light Butter with Canola Oil1 large egg1 tsp vanilla extract1 cup grated zucchini2 cups white flour1 tsp baking soda1/2 tsp. salt2 tablespoons unsweetened cocoa1 tsp cinnamon10 tablespoons mini chocolate chips (semi-sweet)
Preheat oven to 375. Mix brown sugar, butter, egg, and vanilla with mixer. Stir in grated zucchini.
In another bowl stir together flour, baking soda, salt, cocoa, and cinnamon. Add to zucchini mixture. Mix on low speed just enough to combine ingredients. Stir in chocolate chips. Refrigerate dough for 30 minutes.
Spray cookie sheet with no-stick spray. Drop one rounded tablespoon of batter per cookie. Bake 9-10 minutes or until cookies spring back when lightly touched.
Serving Size: Makes 40 cookies - 1 rounded tablespoon of dough per cookie
