Ingredients
1/4 cup onion2 T coconut oil for saute spice1 T black mustard seeds2 tsp fenugreek seeds1 T ground turmeric1/2 cup mung beans1/2 cup brown basmati rice (or other long grain)1 cup any veggie, like sweet potato or squash1 cup any greens, like kale
Directions
Heat coconut oil in heavy bottom pan. Saute black mustard seeds, fenugreek and turmeric for 3 to 5 min on medium heat until browned. Add onion, saute another few minutes. Add beans and rice, stirring frequently. Add water and other veggies. Cook on low heat for an hour until beans and veggies are soft.
