1 lb extra-lean ground beef1 med onion, thinly sliced1 or 2 red/yellow/orange bell peppers, sliced2 cloves garlic, minced1 14.5 oz can diced tomatoesItalian seasonings8 oz low-fat mozzarella cheese, shredded (2 cups)
Preheat oven to 425. Heat a large cast iron skillet over med-high heat. Add the beef, cook for 3 minutes. Turn down heat to med. Add the onions, peppers and garlic (and any other veggies desired). Continue cooking for about 5 more minutes, or until the beef is thoroughly browned and the onions are soft. Add the tomatoes and seasonings and cook another 8-10 minutes to thicken the sauce. Level the top with a spoon. Top with the shredded cheese and bake in the skillet for 20-25 minutes, or until slightly browned.
