Pumpkin protein pudding

2.5 cups lowfat cottage cheese1 can (15.5 oz) pumpkin~ 15 packets splenda (adjust all to taste)1 T cinnamon1 T pumpkin pie spice1 t vanilla extract
Mix everything together well, taste and adjust sweetner and spices. You may want to use a little less than the whole can of pumpking. Remember, you can always add more it's harder to take out.
This can be enjoyed many ways. Either cold and out of the fridge, or I love adding quick oats (.25-.5 cup dry) and a little water and this thickens up for a very nice and creamy oatmeal porridge in the morning.
Great way of getting protein and a vegetable serving with breakfast.
