Green Chile White Bean Stew

1 tbsp canola oil3 cloves garlic1.25 lb. uncooked chicken breast, diced3 cans white beans, rinsed1 can green chiles (not jalapenos - Hatch)2 cans mild Hatch Green Chile Enchilada Sauce1 - 48 oz carton of Chicken Broth1/2 tsp. Adobo Chicken seasoning1/2 tsp. black pepper1/2 tsp. salt
Saute garlic in oil until light brown. Add chicken, broth, and enchilada sauce. Add remaining ingredients and bring to a boil. Turn down to a simmer and let it cook for 45 minutes.
Remove from heat and cool for 5-10 minutes before serving. Top with crushed tortilla chips and shredded cheese.
Serving Size: makes 2 ladles of soup per bowl
