Philly Cheese Steak Bell Peppers

Ingredients
8 oz. roast beef1 medium onion6 oz. baby bella mushrooms2 tbsp butter2 tbsp olive oil8 oz. pepperjack cheese2 green bell peppers
Directions
Cut up onion and mushrooms. Sautee in a pan with butter and canola oil until brown (approx. 10-15 minutes). Meanwhile, cut bell peppers in half and clean out. Tear up roast beef and cook with onions and mushrooms for 5-10 minutes. Preheat oven to 400 degrees. Put provolone cheese in the bottom of bell pepper; layer meat, onions, and mushrooms in bell pepper. Cover with another piece of cheese. Cook for 15-20 minutes or until cheese is golden brown.
