sweet potato quinoa bowl w chimichuri and avocado

Ingredients
1 cup red quinoa2 large sweet potatoes or yams.5 tbsp olive oil3 cups flat leaf parsley.25 cup olive oil1 cup red quinoa2 garlic cloves (or to taste).5 tsp sweet paprika.25 tsp red pepper flakes (or to taste)3 tbsp lemon juice2 small ripe avocados salt and pepper to taste
Directions
preheat oven to 425. dice sweet potatoes, and coat with 1 tbsp olive oil. spread on a lined baking pan and roast for 30-40 mins until desired tenderness. warm remaining 1/4 cup of olive oil on stove. add parsley, garlic, lemon juice and paprika and red pepper flakes to a food processor and coarsely blend. slowly add in the warm olive oil. add the quinoa to a sauce pan and cover with 2 cups of water. bring to a boil, then simmer for 10 minutes or until tender. divide into 4 bowls, add 3tbsps of chimichuri to wach and a quarter of the sweet potatoes too. Half the avocados and slice them lengthwise and add one half to each bowl.

Serving Size: 3/4 cup sweet potatoes, 1/2 cup quinoa, 3 tbsp chimichuri
