Cauliflower Mac 'n' Cheese

Ingredients
Parmesan Cheese, grated, 4 oz Sharp Cheddar Cheese, 5 ozMilk, 1%, 0.50 cup Cauliflower, raw, 0.25 head, medium (5-6" dia) Whole Wheat Penne (dry), 8 oz
Directions
Cook pasta per package instructions and set aside.

Bring medium pot of salted water to a boil, add cauliflower and cook on high for 5 to 7 minutes, or until soft. Drain. Puree cauliflower in blender.

In medium pan over medium heat, combine the pasta, cauliflower puree, cheeses and milk. Stir gently until cheese is melted.

Season with salt and pepper as desired.
