Ingredients
Ingredients:16 oz. chicken1 cup onions, chopped1/2 cup bell peppers, chopped1 tsp. cumin; ground1 tsp. garlic powder1 tsp/ onion powder1/2 tsp. oregano1/4 tsp. salt1/2 tsp. pepper1 can green chilies, chopped1 cup water1 cup Fat Free Cheese8 Mission , 6.5" Low Carb Fajita Size Tortillas
Directions
Makes 8 chimichangos. We usually eat 2 servings of these for a meal with some low fat mexican rice.

Preheat oven to 375.

Cook the chicken in a skillet over a medium heat. Add the onions and bell pepper and cook until soft. Add the cumin, garlic powder, onion powder, oregano, salt pepper, green chilies and water. Simmer down over low heat for about 5 minutes. Remove from heat and set aside.

Heat tortillas in microwave for 20 seconds.

Stuff 2 oz chicken into each tortilla with onions and green pepper. Add 1/8 cup cheese. Fold tortilla from the sides, and then fold over. Pin the top of the tortilla to the bottom tortilla using a toothpick.

Place folded chimi on a baking sheet. Repeat until you have made all 8.

Place baking sheet with chimis in the oven for about 10 minutes.

Top with your favorite Fat Free Sour Cream and Salsa.

    I'll go along with the 5 star ratings!! this was great :) The chile peppers make the flavor. Sauteed a few mushrooms in with the chicken, worchestershire instead of salt. Served with guac, cottage cheese, and parboiled Mexican rice -- fiance loved it and asked me to cook it next week. - 7/31/10
