Chicken Quinoa Salad

Ingredients
Rinse and cook 3/4 cup Quinoa (yields about 1-1/2 cups cooked) in 1-1/2 Cups water (bring to boil then simmer about 15 minutes. Meanwhile chop one small zucchini, 1/2 medium apple, and aobut 1/2 cup shredded carrots. Open and drain one 13 oz canned chicken breast.When quinoa is done (looks fluffy and you see the little rings), rinse in sieve with cold water. Combine all ingredients, then add 1/4 Cup Three Cheese Ranch Dressing Lite. Stir.Eat alone, serve on lettuce greens, or on a whole wheat bun.
