Ingredients
4 Med onions (260 gr) halved and sliced2tble sp Olive Oil1large Green Bell pepper (85gr) halved and sliced1Hot Chillie (5 gr) chopped2 Aubergine (360 gr) Cut into bite size pieces2 cloves garlic crushed145 gr Mushrooms3 large Courgettes (860 gr)6 Medium tomatoes (636 gr)Tomato Puree 500 gr pkt (Lidl)Salt and pepper to taste
Directions
Fry the onions and peppers in olive oil till soft, add all other ingredients, season and simmer for about 45 minutes. Check seasoning and serve hot.
