Lemon Poppy Seed Bread

Ingredients
1 c. whole wheat flour1 1/4 c. all-purpose flour1 c. sugar1 1/2 tsp. baking powder1 tsp. salt1 c. butter, softened3/4 c. skim milk3 eggs2 Tbsp. poppy seed1 Tbsp. freshly grated lemon peel
Directions
Preheat oven to 350. Grease bottom only of four (5 1/2 x 3-inch) mini loaf pans. Set aside.

Combine first five ingredients and mix well. Add remaining ingredients and mix until well mixed.

Spread batter into prepared pans. Bake for 30 to 40 minutes or until toothpick inserted in center comes out clean.

Serving Size: Makes 32 servings (4 mini loaves)
