No-Bake Vegan Key Lime Pie

Ingredients
3/4 cup walnuts6 medjool dates (pitted and soaked in water for 1 hour)2 avocados2 limes (optional 3rd lime for decoration), juiced and zested1 tablespoon stevia2 tablespoons tapioca flourcoconut flakes (optional, not included in calorie calculation)
Directions
1. Blend the pitted dates and walnuts in a food processor.
2. Press into a pie pan with your hands until firm like a pie crust.
3. Blend avocados, lime juice, stevia, zest of 1 lime and tapioca until fluffy.
4. Pour the avocado mixture on top of the crust.
5. Chill in freezer for at least an hour.
6. Top with sliced limes and coconut flakes (optional).

    I give it 5 stars for the crust and another 5 stars for the idea of using an avocado but the stevia was so bitter that it ruined the pie!! I went out of my way to buy stevia for this recipe and therefore hadn't tried it before. Next time I will try spenda or sugar. It was AWFUL!! - 6/18/14

    No, no, no, no, no! This is NOT Key Lime Pie! It is not made with avocado, dates, walnuts, tapioca, or even regular limes. It really and truly is made with Key Limes, named for where they are grown. You can call this lime pie if you want, but in no circumstances is this to be called Key Lime Pie! - 6/18/14

    No. This was bad. Too much stevia, which makes it bitter. I tried to smooth it out with more lime flavor but there was no hope. I am not a picky eater and like to eat healthy but couldn't make it through the first piece. However, the crust is good and so was the coconut on top :) - 6/19/14

    The carb calculation is incorrect. 6 Medjool dates have 108 carbs, divided by 8 is 13.5 carbs just in the dates. Sugar is half glucose, half fructose -- talk about about blood glucose high! If you're a net carb counter, that is 12.25 carb grams but the sugar is still 1/2 glucose, 1/2 fructose. - 6/14/15

    This was AMAZING. You will just die. We avoid nuts because of the high arginine to lysine ratio. Instead of walnuts, we made the crust with 1/2 cup unsalted sunflower seeds, 4 tbsp flax seeds, 4 tbsp flax meal, 2 tbsp sesame seeds, 6 dates, 1 dried fig & 1 tbsp light agave nectar.
