Lentil Chili

Ingredients
2 T olive oil2 lg onions, minced2 tsp cumin1 (28 oz) can crushed tomatoes w/juice2 c brown lentils1 1/3 c chopped fresh cilantro1 c pumpkin seeds - toasted and choppedsea salt and pepper2-3 canned chipolte peppers in adobe sauce chopped
Directions
Saute onions in olive oil till lightly browned. Add garlic and cumin and saute for 2 min. Stir in tomatoes, lentils and 2 c water. Bring to boil, reduce heat and simmer and cook for 50 min till lentils are soft. (Add more water if needed) Add corn and heat thru. Stir in cilantro, pumpkin seeds, s & p and simmer 10 min more.
