Ginger Salmon

4 oz. salmon filet1/2 T. brown sugar substitute1/2 T. lemon juice1/2 T. dry white wine1/2 T. low-sodium soy sauce5 green onions1 clove garlic, minced1/2 t. grated gingernon-fat cooking spray
Spray skillet with non fat cooking spray. Cook salmon 4 minutes on each side. Remove from skillet. Mix remaining ingredients and saute for 1 minute. Return salmon to skillet and heat through.

Made this tonight and it was very tasty. Squeezed the lemon and grated the ginger, so not quick. Skipped the sugar & tried white balsamic. Seemed salty, even with lo-sodium soy sauce. Skin stuck to the pan. Next time, I'll marinate & then bake this to avoid standing over the stove. Hubby liked it. - 2/11/08

(I wish I had had cilantro!) I turned this into a marinade - kept the proportions and made one cup - I left out the sugar, used white balsamic vinegar (it's sweet), used grated onion, garlic, ginger, added a tsp. of black pepper, marinated for 2 hours and then baked it! My family inhaled the stuff! - 1/18/08
