1 cup brown rice, cook according to package directions10oz frozen edamame, thawed1/2 cup grated carrots1/4 cup chopped scallions, green parts only2 tablespoons chopped fresh cilantro leaves2 teaspoons sesame oil1 teaspoon hot Dijon-style mustard2 tablespoons reduced-sodium teriyaki sauceSalt and ground black pepper1 medium head radicchio, thinly sliced or shredded
Directions
