Baby Kale, Tofu, Egg and Feta Scramble

2 large eggs2 oz feta1 (12.3 oz) block Mori-Nu Lite Firm Tofu1 cup baby kale2 tbsp nutritional yeast1/4 tsp garlic saltblack pepper, to taste1/2 tsp Red Pepper Flakes or Cayenne (or to taste)
Pat tofu very dry.
In a non-stick skillet over medium heat, scramble the eggs along with the feta.
As the eggs start to cook and firm up, add tofu and sprinkle with the yeast, salt, and pepper(s). Scramble, chopping the tofu as finely as you can.
Once eggs are cooked, add the kale and cook lightly.
