Scrambled Tofu for two

Ingredients
8 oz. firm tofu, cubed1/2 cup chopped onion1/2 cup chopped green bell pepper1/4 cup chopped tomato (about 4 grape tomatoes, quartered)2 tablespoons toasted sesame oil1 tablespoon soy sauce
Directions
(Note: I don't really measure the sesame oil and soy sauce.)

Heat a non stick skillet and put about 1 tablespoon of sesame oil in the pan. Add the tofu, and saute until browned, sprinkle with some soy sauce (about a half tablespoon) while sauteing. Remove to another dish.

Add another tablespoon or so of sesame oil and stir fry the onion and green pepper until soft and cooked to your liking. Add the tomatoes and continue cooking until the tomatoes are heated. Add the tofu back to the skillet and cook until everything is heated through.

Divide in half unto two warmed plates

Serving Size: Divide recipe in half to make 2 servings.
