Sunshine Bran Muffins

Ingredients
Sunshine Bran Muffins1 cup whole wheat flour1 cup bran1/4 cup splenda brown sugar1 t baking soda1/2 t salt1/2 t cinnamon1 cup grated carrots1/3 cup pineapple1/4 cup grapeseed oil1 egg1 t vanilla
Directions
Blend in large bowl, flour, bran, brown sugar, baking soda, salt, cinnamon, carrots and pineapple. In 2nd bowl, beat sour milk, oil egg and vanilla (sour milk = 1cup milk + 1 tsp vinegar let sit 10 mins). Add liquid ingredients to dry and mix until just moistened. Spoon into greased muffin tins. Bake at 375 degrees for 20 minutes.
