Zesty Chicken & Black Bean Soup

Ingredients
1 1/2 lb boneless skinless chicken breast1 (15oz) can low sodium black beans, rinsed & drained2 cups low sodium chicken broth 1 cup mushrooms, sliced 1 cup frozen corn 1 cup salsa1 1/2 tsp cumin 1/4 cup fat free sour cream3 Tbsp fat free cheddar cheese, shredded 1/4 cup fresh cilantro, chopped
Directions
1. Place chicken breast in the slow cooker. Add the salsa, corn, black beans, chicken broth, mushrooms and cumin and stir until the cumin is well incorporated.

2. Cover and cook on LOW 8 hours.

3. Top each serving with a dollop of sour cream and a sprinkle of cheese and cilantro.
