Pumpkin Muffin In A Mug

Ingredients
1/3 - 1/2 C Pumpkin Puree (fresh or canned)1 Egg1 TBS butter1 TBS Truvia or other granular, no cal, sweetener1/2 tsp ground Cinnamon.25 tsp Pumpkin Pie Spice2 TBS Ground Flax Meal1 TBS Coconut Flour1 TBS Almond Flour1 tsp Vanilla Extract1/8th tsp Salt (optional).5 tsp Baking Powder
Directions
In a large MUG, melt your butter, then add vanilla, Egg, Pumpkin Puree and stir until blended with a fork. Add all other ingredients to your mug and stir briskly until it's all incorporated. Put it in your microwave for about 2 min, 30 sec. You will have to figure out what time works best for your microwave. It may still be a little soft/runny in the middle. That's okay! Just dump it into a bowl, let it cool a little, then put a dollop of fat free Redi Whip on top and ENJOY with a cup of coffee or tea. Perfect GRAIN FREE, SUGAR free breakfast or dessert.
