Panang Shrimp Curry

Ingredients
1 TBS * Olive Oil5 cup * Onions,sliced 1 tsp * Garlic, powder or 1-2 Cloves, minced16 oz * Shrimp1 can * Coconut Milk Lite1 tbsp Panang Curry paste1 cup * Red Bell Pepper - chopped 1.5 C Asparagus Cut -fresh or frozen
Directions
Cook favored pasta or rice according to directions.

Heat olive oil in skillet while coarse slicing onion.

Add Onion to oil and saute till softening. Add garilic and shrimp saute till shrimp turns pink, about 2 minutes.

Add coconut milk and panang paste and stir in well. Add chopped red bell peppers and asparagus cut into pieces about 3".

Simmer for a couple minutes Season to taste.

Serve over or with pasta or rice.

    I'm making this tonight for dinner! You can actually buy curry already made to make this quicker and think about adding brocolli, carrots and potatoes too. Serve over quick cook brown rice. yum! - 5/19/09
