Slow-Cooker Apple and Onion Pork

Ingredients
2.5 pounds boneless pork loin2 Granny Smith apples, sliced1 large yellow onion, sliced1/4c apple cider vinegar2tsp Dijon mustardSalt and pepper, to taste
Directions
Add apples and onion to slow cooker; toss with vinegar and mustard. Season both sides of pork loin and place on top. Cook on low 6-8 hours. Slice and serve with onions and apples and their juices.
