Chewy Chocolate, Coconut, Banana Nut Granola Bars

3/4 cup coconut milk2 Tbsp maple syrup, honey or agave nectartsp vanillapinch saltlarge ripe banana2-4 Tbsp ground flax seed2 1/3 cups old fashioned or quick oats1/2 cup toasted chopped nuts (almonds are great!)1/4 -1/2 cup mini chocolate chips
-Heat coconut milk and syrup over medium heat until just to a boil, stirring. Stir frequently for another 15 minutes or until the milk has reduced by half. Add vanilla and a pinch of salt. Let this cool to room temp until you don't mind the chips melting.
-Mash banana and then add the rest of the ingredients, stirring in the coconut milk mixture last.
-Press into a prepared pan (8 by 8 with greased parchment paper lining it).
-Put parchment paper on top too and press flat.
-Freeze for 30 to 60 minutes or until able to slice into bars.
Serving Size: Makes 25 mini bars (1" by 2")
