Buckwheat Pancakes Based on a Theme by Paganini

1 c buckwheat flour1/2 c all purpose flour6 T sugar1/2 t salt1 t baking soda4 T unsalted butter, melted1 large egg2 c low fat buttermilk
Heat a well oiled cast iron griddle or other surface
Mix dry ingredients together
Add the melted butter and stir
Add half the buttermilk with the slightly beaten egg and stir in
Stir in the rest of the buttermilk (or a little less)
Cook about 10 6" pancakes
Serving Size: makes 10 pancakes
