1 can - Black beans3 Tortillas halved1 pack of tofu3 cloves of garlic1 large onion1 pint of grape tomatoes1 avocado1 lime - juiced2 cups greek yogurt1 T sriracha (optional)1 c cooked quinoa2 cups cheese
Preheat your oven to 400. Mix together your black beans and quinoa. Divide your quinoa mix among the 6 tortilla halves. Divide up your tofu on top of that. Puree together the garlic, tomatoes, and onion and spoon on top. Top with your choice of cheese and put in the oven for 12 minutes or until the tortillas start to crisp up. Mix together the yogurt, juice from one lime, avocado, and sriracha (or other spices of your choice - chili powder is good, too!) Use this mixture to top your cooked tostadas.
