Creamy Super Vegetable Soup

Ingredients
2 TBSP Olive Oil1 Large Onion, Chopped4 large Carrots, roughly chopped3 large ribs of celery, roughly chopped8 large cremini mushrooms, chopped4 cups Broccoli, roughly chopped4 cups Cauliflower, roughly chopped10 oz Pinot Grigio2 TBSP fresh rosemary, Finely chopped2 tsp granulated garlicsalt to tastehot pepper flakes to taste
Directions
Sautee Onion, Celery and Carrots in Olive oil. Add Mushrooms once veggies are tender and slightly translucent. Continue to sautee until mushrooms are tender and slightly caramelized. Add wine and all of the spices. Bring to a boil. reduce to a simmer and add all remaining ingredients. Bring to a boil, reduce heat and simmer, covered, for about an hour or until veggies are very tender. Remove from heat. Puree in batches, and pass through a medium sieve. Serve warm with a bit of grated cheese on top.
