Palak Mutter Paneer

1 t cumin seeds, 1 t mustard seeds (optional)1 onion, chopped1 T ginger garlic paste2 cups chopped fresh tomatoes1 T butter or oilGaram masala 1T or to taste150 g spinach (about a pound)1.5 cup frozen peas1 block paneer (375 g)1 cup vegetable broth
In butter, fry cumin and mustard seeds
Add onion and saute till soft
Add tomatoes, ginger garlic paste and cook till it resembles a thick paste (5-7 min)
Add garam masala and cook a minute more
Add spinach and vegetable broth, cook till wilted
Puree using immersion blender (optional)
Add cheese, peas and season to taste
Cook on low for 5-10 minutes to allow flavours to blend
Serving Size: Makes 6 generous servings
