Mahi Mahi in Balsamic Vinegar Sauce

Ingredients
2 4-oz Mahi Mahi fillets1 tsp Extra Virgin Olive Oil4 Tbs Balsamic Vinegar4 cloves Garlic1 tsp Ground ginger1 Tbs Parsley
Directions
Preheat oven to 350 degrees

FISH:
Wash Mahi Mahi fillets and pat dry. Brush with olive oil and bake covered in aluminum foil for 20-25 minutes until opaque and flakey.

SAUCE:
Slightly warm balsamic vinegar, garlic, ginger, and parsley - do not let it simmer or evaporate.

Pour over Mahi Mahi fillets and enjoy!
