1 lb bulk sweet Italian sausage1 medium onion, chopped1 stalk celery, chopped1 clove garlic, minced4 cups frozen diced hash brown potatoes, thawed2 14.5 oz cans diced tomato with basil, garlic and oregano, undrained1 10 oz pkg frozen chopped spianch, thawed and drained1 cup shredded cheddar cheese
In a large skillet, cook and stir sausage, onion, celery, and garlic over medium heat untill onion is tender ans sausage is no longer pink. Drain fat. Stir in potatoes and undrained tomatoes, bring to boiling. Reduce heat. Simmer, covered, for 10 minutes or until potatoes are tender, stirring occasionally. Stir in spinach. Sprinkle with cheese. Cook, covered for 2 minutes or until cheese melts.
