Vegetarian Fried Rice - with "Chicken" (or "Beef") and Broccoli

Ingredients:1 cup chopped fresh broccoli1 small can of peas1 1/2 cup of brown rice (makes 3 cups prepared)2 MorningStar Farms bacon strips1 bag of MorningStar Farms Chicken or Beaf Strips meal starter3 tbsp Soy SauceAlternatives:Use boil-in-bag rice for easier cooking.For peas, use a small can of no-salt added to cut down the sodium.Cut the soy sauce to decrease the sodium.Use (Pam) cooking spray to fry.
Preparation:
Boil the rice as instructed. Drain and let cool. Cook the broccoli until soft.
Bake the bacon strips in oven, 350 degrees for 5 - 8 minutes (see directions on box).
Spray cooking spray in a heated skillet and prepare the Chicken or Beaf strips until soft. Put the strips on a dish and cut in small pieces. Take the bacon and break/slice in small pieces and add to the Chicken or Beaf pieces.
Make the meal:
Spray cooking spray in a large skillet or wok, add the rice (and soy sauce if needed) and stir-fry for about 2 minutes until rice has a brownish tint. Add the rest of your ingredients and stir fry for about 5 minutes. If you don't want to add the soy sauce, you can mix everything from the start.
It make 6 1-cup servings. If you have it, add a teaspoon of Sambal (Indonesian hot-pepper sauce) to each serving. You can also add a 1-egg omelette (egg-beaters or egg-whites) to each meal.
