Slow Cooker Beef, White Bean and Quinoa Stew

Ingredients
1 lb stew beef1/2 cup onions, chopped1 cup carrots, diced3 cloves garlic, minced2 cans cannellini beans, drained and rinsed28 oz petite diced tomatoes1/2 tsp dried thyme2 tsp dried basil1/2 tsp dried red pepper flakes1 1/2 cup beef stock2 cups cooked quinoa
Directions
Place all ingredients except quinoa into bowl of slow cooker. Cook, covered, on HIGH for 4 hours. While stew is cooking, cook quinoa. After carrots are cooked, add quinoa and heat until heated through.
