Paleo Spicy Breakfast "Muffins"

Ingredients
6 eggs, scrambled with salt and pepper to taste1 tbsp. creamer or silk milk4 oz. baby bella mushrooms, chopped1 jalapeno pepper, chopped1 med. green pepper, chopped1 onion, chopped2 green onions, chopped4 slices of bacon, chopped
Directions
Preheat oven to 350 degrees. In a bowl, scramble 6 eggs and add creamer/silk, salt & pepper to taste. Chop all veggies & bacon, combine and saute in a pan until softened. Slowly add veggie/bacon mixture to eggs. Spray a muffin pan with nonstick spray (I use an olive oil spray), pour mixture into pan. Bake for 25 minutes or until golden brown on top. Remove muffins from pan and let cool on a plate. Store in an air tight container, should last a few days in the fridge. Zap for 30 seconds in the microwave to reheat.
