Colleen's Red Lentil Soup

Ingredients
1 24 oz pkg Red Lentils6 c water1 brown onion, chopped1 carrot, chopped1 celery stalk, chopped1 12 oz pkg Applewood Bacon, sliced and chopped2 Tbsp Cumin1 Tbsp Simple Asia Ginger Garlic Seasoning1 Tsp Ground Tumeric
Directions
Chop sliced raw bacon and cook in stock pot until crisp. Drain and set aside. Cook onion, carrot, and celery until limp, drain and set aside. Pour off bacon grease and discard. Add red lentils and water, bring to boil. Add reserved bacon and vegetables and simmer until lentils are soft and soup is thick; about 90 min. Serve hot.
