Glutenfree Crepes

Ingredients
2 eggs3 T tapioca flourpinch of salt1 c. sliced strawberries1 small ripe banana1/8 t or less pure Stevia powder1/4 c plain lowfat yogurt
Directions
Mix 1st three ingredients in a blender or shaker. Mix well. Let rest a couple of minutes while you mash banana, mix with strawberries and Stevia. Heat griddle oiled lightly. Pour 1/3 batter on griddle (I used an iron skillet). Cover for about a minute until can turn crepe over. Cover for a minute, then remove to plate. Fill with 1/3 fruit mix and add some plain yogurt, roll up. Repeat for two more crepes. Enjoy!
