Apple Oat Pancakes

1 cup dry rolled oats1 tbsp baking powder1/2 tsp cinnamon 1/4 tsp cardamom 1/4 tsp salt1 cup non-dairy milk (or whatever you prefer)1 small apple sliced and chopped1/2 tsp vanilla extract oil
In a large bowl, add in the oats and sift in the baking powder. Add the cinnamon, cardamom, salt, and stir well to combine. In a small bowl, combine the milk and stir in the sliced apple. Add the wet mixture to the dry mixture and stir. The mixture will be loose so let sit for a few minutes to thicken.
Heat a lightly oiled skillet over medium heat for a few minutes until hot and then reduce to low. Then using a laddle, scoop in the batter to form pancakes. Flip when bubbles appear and the bottom is golden brown. Serve with pure maple syrup and a sprinkling of cinnamon or powdered sugar.
Serves: 6-8 medium to large pancakes
