1 medium onion, chopped8 oz ground chicken breast 4 cloves garlic1 can dark red kidney beans, drained & rinsed1 can blacks beans, drained & rinsed1 can sweet white corn, drained & rinsed1 can diced tomatoes, reduced sodium2 cans refuced sidium chicken broth1c. Greek yogurt, 0% fatJuice of 1 lime1 Tbsp chili powder1 tsp cumin1 tsp cilantro flakes (or fresh if desired)1 tsp cavender's seasoning1/2 tsp black pepper1/2 tsp cayenne pepper (if desired)Salt to tasteShredded cheese, if desired for garnish (not included in nutrition)Sour cream, if desired for garnish (not included in nutrition)Green onions, if desired for garnish (not included in nutrition)
Add all ingredients to crock pot except Greek yogurt and cook low/med for 6-8 hrs. Add Greek yogurt about 10 -15 minutes before serving. Serve with shredded cheese, siyr cream, green onions if desired.
