Veggie Ground Beef Mash

- 1 lb. of ground beef (85% lean or less, for a ketogenic fat content).- 1/4 cup of blue cheese crumbles- 1 medium bell pepper, slices- 2 TBSP. chopped onion (I prefer red, but any onion will do).- 1 Cup sliced mushrooms- 1 TBSP. Olive Oil- 2 Cups baby spinach- Salt and pepper, to taste
- Prep your onion and pepper, and set aside.
- Heat a skillet with olive oil, and cook onions for 3 minutes.
- Add ground beef and brown it.
- Add spinach, peppers and mushrooms, and stir until veggies are tender.
- Sprinkle with salt and pepper, mix in blue cheese, and serve.
