Skinny Cookies

Ingredients
2 Tbsp. Chia Seeds (ground)2 Tbsp. Almond Milk1 Very ripe Banana (small)1 Tbsp. Creamy Almond Butter1/4 Cup Unsweetened Shredded Coconut1/4 Cup Pitted Dates, diced1/4 Cup Oatmeal1/4 Cup Dark semi sweet mini chocolate chipsDash of Cinnamon
Directions
Mix ground Chia seeds with almond milk and stir. Let stand for 10 minutes until gelled.

Mix remaining ingredients and place in a food processor. Pulse blend 3 or 4 times. Add to gelled mixture, mix well and drop by heaping spoonfuls onto greased cookie sheet. Bake for 20 minutes @ 350 degrees.
